7am start to the day, off for a quick hike up sunset trail with a cup of coffee before catching up with the rest of the girls for breakfast at our hotel.
Spicy chorizo burrito, eggs ,home fries, yogurt with fresh fruit, oatmeal, toast. Yum.
1st hike of the day was a 2 mile round trip hike up to the birthing cave rock.
It started as a relatively easy walk thru the red clay trail which turned in
to a moderately steep but not too long climb to the opening of mother nature's vagina., hence the name birthing cave.
Short walk to bell tower, it is said that bell tower shakes with every change of seasons in navajo culture.
3rd hike was up to the chapel of the holy cross where we all took a moment to reflect on our blessings.
After 4 days of hiking we took a few hours this afternoon to enjoy the beautiful pool and rest our tired bodies before dinner.
Tonight's dinner was a treat we planned to celebrate us. We all dressed up and headed over to the Mariposa restaurant with gorgeous views all around.
Boy did we work up an appetite 😊.
We started with creative cocktails and filet empanadas as well as octopus and a delicious salad to share.
The main dishes were amazing from the stuffed poblanos, the steaks with mashed potatoes flavored with lemon zest and almonds, elote street corn..
Finally we sampled a taste from each dessert. The maple coconut flan, tres leches cake, pumpkin cheesecake, Churros and strawberry gelato. Thoughtfully presented with a single candle in each dessert to represent celebrating us. The waitress wanted to join our little tribe and run away with us.
Truly blessed to be with these women.
I encourage everyone to start there own group even if it's only once a year.
A lot of good food is great after a hike. I recently tried gelato on a hike and it was delicious.
